The doors open Wednesday, 20 May. Here's who's setting up shop at Spring Farm Village.
From your weekly shop to your morning coffee, your scripts to your school-run dinner — the new shopping centre is filling up nicely.
Anchored by Coles
Coles Spring Farm Village is the supermarket's first new store in Tasmania since 2022, and the largest in the region. At 2,800 square metres, it brings 11 grocery aisles, a premium fresh produce department, an open-front bakery turning out fresh sourdough and patisserie daily, and a full-service deli with a fresh seafood counter.
There's also six Click & Collect bays for when you're in a hurry, a frozen dessert bar, and a mochi station — a few delicious surprises alongside the weekly basics.
A strong focus on local produce means plenty of Tasmanian favourites on the shelves: Ashgrove Cheese, Betta Milk, Cripps Bakery, Elly's Gourmet Confectionery, Hartz drinks, National Pies, Nichols Poultry, and Johnno's jams and sauces.
Behind the store is a team of more than 240 — including 200 new faces, 40 Coles transfers, and around 50 junior team members starting their first job. That makes Coles the largest employer at Spring Farm Village.

Happy Larry Deli — the cult Hobart deli is bringing its sell-out sandwiches, iced strawberry matchas, and viral Dubai Chocolate Croissants to Kingston, plus a rotating specials menu.
Parthenon Souvlaki Bar — authentic Greek street food
Smash Boy Burgers — smashed patties, loaded fries, milkshakes that mean it
Sushi Sushi — fresh sushi made daily, exactly what the school run ordered
Viva Italia Pizzeria — wood-fired pizza and proper pasta
Hansel and Gretel Bakery for fresh bread, pastries, and a sweet treat for the road.

Spring Farm Village sits opposite Bunnings on Channel Highway, with over 350 car parks including dedicated bays for mums and bubs, seniors, accessibility, EV charging, RVs, and taxi/Uber pickup. It's built to be the most technologically-advanced and sustainable shopping centre in Hobart — free Wi-Fi throughout, wireless charging stations, and a building designed for the long haul.
